Refreshing Cucumber Lemonade (Sugar Free, THM FP)

This summer-tastic cucumber lemonade is one of my new favorites for many reasons - the main being, it's easy to make and my whole family LOVES it. [No, really, I had to use the all-caps because my children devoured the first batch in almost a single day. O_O] I have no doubt that your family will love it too!

This recipe is perfect for a summer party, or if you just want to shake up the family's drink routine. It's surprisingly easy, and this recipe makes a half gallon of lemonade.

Start by peeling and roughly dicing the cucumbers.

Place the cucumbers into a high-powered blender with 1 1/2 cups of water and the sweetener, and blend on high until the cucumber is fully broken down.

Strain the cucumber pulp using a fine sieve, and reserve the juice.

Next, juice the lemons. It will depend on the size and juiciness of your lemons as to how many you'll need. You need to get 1 cup of lemon juice - for me, that was about 8 lemons.

Then combine the cucumber and lemon juice into a half gallon drink dispenser. Add the sparkling* and flat water, lime extract and liquid stevia. Give it a big stir, top off with some ice, and serve!

This is one cool, flavorful drink to help you beat that summer heat! Kids and adults will go nuts over this one.

Main Ingredients

2 english/hothouse cucumbers, lightly skinned and roughly quartered
1 c lemon juice
1/3 c pyure or thm gentle sweet
water
36oz sparkling water (flavored or not)
1/4 tsp lime extract
liquid stevia to taste

Directions

1. Place cucumbers, sweetener, and 1 1/2 cups of water into a high-powered blender and blend on high until cucumber is fully broken down. Strain the cucumber pulp from the juice using a fine sieve, and set the juice aside.
2. Combine the lemon juice, cucumber juice, lime extract, and sparkling water in your drink dispenser. Top off with flat water and/or ice. Add liquid stevia to taste, stir, and serve.
3. Store in the refrigerator for up to 5-7 days. Stirring as needed.
